Serves: 4-6 (Depending on portion size)
Ingredients:
· 1 Shallot Onion
· 1 Fresh Chilli (I used half green and half red)
· 2 cloves Garlic
· 1 bag 370g Beansprouts
· 2 Mixed peppers
· 6 Mushrooms (I use Forestiere)
· Spinach
· Rocket
· 1 handful per person of Pasta (Linguine works best, but I used penne)
· 2 packets King Prawns
· Malay sauce (Optional. Can use Teriyaki or Soy Sauce depending on preference)
Method:
1. Bring a small pot of water to boil for your pasta (Linguine works well in this dish)
2. To begin with it’s best to prep all your ingredients, including washing and chopping.
3. Heat up a couple tbsp. of vegetable oil in large pan or wok.
4. Put your chopped onion in and fry until they begin to go soft and translucent, turn the heat to low and add the garlic and chilli. Fry these for a further 30 seconds.
5. Add your peppers and fry for a further minute. Add the beansprouts and sprinkle with the Malay sauce, cook for 2 minutes before adding the mushrooms and prawns to cook for another minute.
6. Finally throw in your pasta to heat through and add chopped parsley.
7. Season to taste.
8. Chop the stems off the spinach and wash with the rocket. Create a rocket and spinach bed on each plate, before serving portions of the stir-fry on top.
